Generally speaking, I view a recipe as a set of guidelines that should be interpreted by the cook (maestro). It’s like a musician interpreting a piece of music. The notes are there but it will always sound slightly different depending on who’s playing.
Now let’s just say that part of the reason I feel this way is, I can’t follow a recipe to save my life. I always go off on a tangent and do whatever I feel like. In your case, I suggest following it, more or less, the first time you make it and then deciding that you like fresh thyme instead of rosemary and being more fearless the next time.
When it comes to dessert recipes, hold on to that paper with a tight grip and get out your glasses, if you need them. Read the whole recipe through before starting anything. Baking is a science so we don’t want to mess with that, or I can’t be responsible. You can take some liberties like eliminating the pecans or changing dried apricots to cranberries but that’s all I would suggest.
