I like to pick my main dish first and then work in my apps and other dishes to follow.  I’m not saying that is the only way to fly but it’s easier to work around your lamb chops then trying to figure out what to serve after your lettuce. 

I also follow the seasonal rule here and use a cooking method that suits the season.  I keep the braising to fall and winter and beat the heck out the bbq in the summer.
