BABY KALE, RADICCHIO SALAD WITH PEARS & CITRUS OLIVE OIL DRESSING

This is a hearty, colourful salad with great notes of bitter, fruity and sweet flavours. It's such a show stopper for your winter entertaining season. 

 

Ingredients

1 small box baby kale salad, pre washed

1 head Radicchio di Treviso or washed baby spinach

1/2 head fennel, thinly sliced 

Dressing:

1/2 tsp. Dijon mustard (2.5 ml)

1/4 cup sherry vinegar(50 ml)

1/3 cup extra virgin olive oil (75 ml)

Juice and zest of half an orange 

sea salt and freshly cracked black pepper

1 small box baby kale,

1 head Radicchio di Treviso

1/2 head fennel, thinly sliced

1 large bosc pear, peeled and thinly sliced , drizzled with lemon juice to prevent browning 

Toasted walnut halves for garnish, optional

 

Instructions

Toss kale, radicchio and fennel  in a large shallow bowl. Pour over half the dressing and toss to coat lightly.  Sprinkle with sliced pears , walnuts and pour over dressing.  .
